Easy Dinner

(FYI, the menorah from the temple that started this holiday had seven prongs. What we light on Chanukah has eight, so that is why it has it’s own special name, “Chanukiah.” Menorah works too, and everyone will actually know what you are talking about.)

Tonight is the sixth night of Chanukah already! How on earth did these past few days sneak by? Mo and I were just saying that as soon as you really settle in and realize it’s Chanukah, it’s almost over. It happens every year. I haven’t even made sufganiyot (doughnuts) yet! Well, tonight’s the night folks. I’m going to use my friend Shayna’s recipe for caramel sufganiyot, make some homemade whipped cream and rock this greasy holiday out!

But, before I get the treats cooking, I will share tonight’s super healthy, quick, and easy dinner. It’s light, nutritious, flavorful…and perfect as a prelude to a really fantastic dessert!

Coconut Curried Chickpeas with Rice

chop and sautee half an onion and two cloves of garlic over medium heat in a little oil until the onion is translucent
cut a zucchini in half lengthwise, then into thin slices
slice a carrot very thin (that way it will cook in the same amount of time as the zucchini)
throw everything in the pot with a little veggie broth or water
add tumeric, paprika, ginger, cumin, a little cayenne, a teaspoon or so of soy sauce and cook over medium high heat until the water or broth boils off


Add a can of coconut milk, a can of chickpeas, cooked green beans or peas (I had fresh leftover in the fridge but frozen work too!). Once everything is hot, turn off the heat and add chopped cilantro. Taste for seasoning, serve over brown rice, and enjoy!

This is one of my favorite easy weeknight dinners, even though I forget about it for months at a time. It’s nice to see you again delicious veggies!

    1. Somehow I forget that there are quick, easy, AND healthy options…when 4pm rolls around I’m just like, “Well, I give up. Ben here’s an avocado and a PB&J. I’m having scrambled eggs. Mo, you’re on your own.” LOL
